Head Chef - Yellowfin Seafood Restaurant CAMPBELL MARKS – Head Chef
Born and trained in New Zealand; Campbell spent a number of years in the upmarket and vibrant centre of Wellington before moving to Australia. Campbell has a strong background in 5 star hotels where he trained under multicultural, award winning chefs. He has a particular passion for seafood and contemporary cooking which ensures Yellowfin Restaurant is in competent hands.
ANDREW McELHONE – Owner
Originally from Sydney. Trained as an economist, he found his true calling when living in Byron Bay where he founded Oh Delhi Tandoori and Olivo restaurants. Andrew and his young family moved northward and founded Marine Restaurant in Kingscliff and finally arrived on the Gold Coast in 2003. Sage Cafe Restaurant was opened in 2004 and was an instant success with locals and tourists alike. When the premises next door to Sage Cafe became available; Andrew then founded Yellowfin Seafood Restaurant in 2006 followed by 1 two 3 Mediterranean Dining & Lounge Bar in 2008. A keen waterman with a passion for year-round daily swimming in the surf, it was always going to be a natural fit for Andrew to start up a seafood restaurant focussing on the freshest produce particularly fresh fish and local seafood

RYAN PINKERTON – Assistant Manager
Ryan was introduced to the art of making espresso coffee over 12 years ago, then shortly after landing a supervisors position, found himself in his element. The service industry came naturally to Ryan as his skills base grew rapidly in various areas of operating a café. Upon turning 20 and starting University, working as a barista part time was the best way he could make money doing something he enjoyed and was very good at. With the experience he gained behind a bar, Ryan became a barista trainer and bar manager, working within some of the busiest cafes and restaurants the Gold Coast had on offer. In 2005 Ryan joined the Sage Café Restaurant team. This is where he developed his waiting skills and before long, became part of management and the furniture. Ryan felt privileged to be a part of the development of Yellowfin Seafood restaurant which he later managed, then to later take part in the development of 1two3 dining and lounge Bar. After some time Ryan took on a assistant general management position until all three restaurants developed for themselves a stable and strong management team which now exists today.
JUSTINE CLARKE – Functions and Marketing Manager
Starting her hospitality career at the Hyatt Hotel while still studying at University, Justine eventually transferred between 3 different Hyatt Hotel properties nationally; gaining valuable management experience in casual and fine dining restaurants, bars and nightclubs, room service and conference departments. Upon relocating to the Gold Coast, Justine was part of the management team of several high profile restaurants before joining the Sage restaurant group in 2004. With a strong background in customer service and events planning; Justine has had many years experience in co-ordinating functions of every type and gets genuine enjoyment from liaising with clients in the lead-up to their special events.
